Description
Ingredients
- salmon steak (approximately one pound)
- pepper and salt
- butter
- water
- fennel (or vinegar)
Method
- Using a double saucepan, put a few fennel leaves in the lower one and fill it with water.
- Season the salmon steak with pepper and salt, put a large knob of butter on top and place in the second saucepan, over the lower one.
- Boil the water and allow the salmon to cook in this steam for about fifteen minutes.
- Alternatively, place the salmon steak on a greased enamel plate, rest it on top of a saucepan of boiling water and cover it with the saucepan lid.
- Steam the fish in this way, allowing fifteen minutes per pound weight.
Steamed or poached salmon was highly commendable for a person suffering from a stomach ailment.
