Description

Ingredients

six ounces plain flour
two ounces sugar
two ounces fat (butter or lard)
half a pint hot milk
one teaspoonful ginger
half a teaspoonful bicarbonate of soda
dried fruit, if desired


Method

Melt the fat in the hot milk and pour gradually into the dry ingredients.
Mix together well and put the mixture in a greased basin.
Cover with greaseproof paper or cloth, tie securely and stand the basin in a saucepan half full of water.
Boil for approximately one and a half hours.


This pudding was served, fairly regularly, as a second course for the mid-day meal during the winter months in the Gower area.
